Lemon BarsCrust:
1 c flour
1/2 c butter
1/4 c confectioners sugar
Blend flour, butter and sugar, and press into an 8 inch square pan. Bake at 350F for 20 minutes.
Topping:
2 eggs
1 c granulated sugar
1/2 tsp baking powder
1/4 tsp salt
2 tbsp lemon juice
confectioners sugar
Beat eggs, add sugar gradually. Add baking powder, salt and lemon juice and mix thoroughly. Pour over hot crust, return to oven, and bake 20-25 minutes longer, or until lightly browned. Do not overbake. Dust with confectioners sugar.
